We bought a folding table from Little Mountain Woodworks in Vernon WA. Apparently he used to supply folding tables to Nordic Tug at one time. 
He's a master craftsman, and did a lovely job for us - cost about $900 five years ago. 


If folding tables are now supplied with new 39's, maybe order one from the factory?

I can send you photos and dimensions of the table for 2003 models which I consider to be the best overall offering. I never liked the large base, moveable table as your boat was probably equipped. Later (2005 or 2006 up, I believe) models offered a table with no fiddle rails and too small to seat 4, let alone 6 people. (It's a bit of a stretch to seat 6 at our table but it can be done using smaller dinner plates.) I added a slider that facilitates moving the table fore and aft about 6" which provides greater accessibility to the settee whether the table is raised or lowered to cocktail table level. Two supports would be only slightly more rigid with some compromise for stowing moveable chairs while underway. All the parts to duplicate the support/slide hardware are still available at West Marine. Will send photos to you in a separate mailing.

We are planning to build a fold up teak galley table for our 37' NT. Does anyone out there have one that they like they can give me dimensions for? And is it better to have 1 pedestal or 2? Thanks.
