Hot Water Tank Fitting Leak?

I discovered a leak from the INPUT side of my Force 10 Hot Water Tank - a slow but steady drip into the bilge.  It looks like the fitting connecting the plastic pipe to the bronze input fitting on the water tank has deteriorated and needs to be replaced.

Any hints as to how to replace the fitting?  If I undo it there doesn’t appear to be any room to wiggle the piping to pull it apart.

Another question - there’s a crossover line between hot and cold?  What’s the purpose of that?  Doesn’t show in my plumbing diagram.
